Creating the Seagull website was an extended, deliberate journey where the brief evolved as we explored new possibilities. This intentional pace allowed us to stay entirely true to the soul and purpose of the brand. Ultimately, the strategy centered on the message, the philosophy, and the mood. Sarah didn’t want a conventional site filled with product photography; instead, she wanted to communicate their place in the world. The goal was to cultivate an evocative space where you capture the essence of the bakery before you ever step foot inside.
With the strategy in place, we set out to bring this vision to life. Sarah’s background as an artist made for a deeply collaborative process. The concept was to elevate the surrounding environment as the hero: this is where we bake, this is what we look out at every day, this is the landscape that shapes us.
By pairing our brand identity work with restrained photography from Leon Murphy, alongside some of Sarah’s and our own imagery, we told a story quietly and without fuss. The resulting digital experience features a minimal online store to pick up artisanal goods and a news section to follow their continuing journey.

When Sarah started Seagull Bakery from her back garden over twenty years ago, the concept of opening a commercial storefront wasn’t even on the horizon. Fast forward and Seagull has expanded to three shops, making a definitive mark on the Irish bread scene. Despite this growth, their core philosophy has never wavered: a deep commitment to community, the use of only the finest sourced ingredients, and a dedication to using Irish grain in all their products. Today, Seagull has built a cult following, evolving into a true destination for locals, foodies, and visitors alike.
We sat with Sarah in those early days, discussing the future and imagining what could be. It has been an incredible journey to align with and be a part of. This philosophy of local provenance naturally trickled down to their choice of a design agency, sparking a long-term partnership with us here at TrueOutput. Keeping it local has fostered an enduring relationship where bakery and brand move together, slowly and organically evolving side by side. Our close proximity allows us to see things early, react quickly to new opportunities, and provide continuous advice and reassurance along the way.
